Colombia - Finca Santa Monica - Passion Fruit Co-Ferment
We are so excited to share another perfectly executed Co-Fermented coffee from producer Jairo Arcila!
This lot is 100% Castillo variety. Arcila processed it with an experimental fruit maceration process in which the whole fruit is first fermented in an anaerobic environment along with wine yeasts and macerated fruit for 72 hours. After the co-fermentation process, Arcila and his team pulped the cherries and placed them to dry on raised beds along with macerated fruits until they reached the ideal moisture content.
Jairo Arcila is a third-generation coffee grower from Quindio, Colombia. He now works with his two children at their farm, Finca Santa Monica; together they produce incredibly high quality coffees, continually learning, improving, and innovating in order to achieve excellence. We have sourced coffee from him frequently in the past, and their coffees alway exceed expectations!
Arcila produced a micro-lot of this coffee, and we have very limited quantities!
