Coffee Spotlight: Jairo Arcila Lychee Co-Ferment
It’s time to spotlight another one of our current award-winning specialty coffees! This is another amazing coffee for those of you who are fans of co-fermented coffees. It’s a beautiful example of the types of co-ferments that are coming out of Colombia.
Jairo Arcila is a third-generation coffee grower from Quindio, Colombia. He now works with his two children; together they produce incredibly high quality coffees, continually learning, improving, and innovating in order to achieve excellence. Their farm is one of our favorites to work with, and we’re so excited to share this coffee with you!
This single varietal Pink Bourbon lot from Jairo Arcila is an exceptionally clean and crisp coffee for special occasions. It was co-fermented with dried Lychee and wine yeast then underwent a dry anaerobic fermentation of 72 hours. After fermentation the coffee was slowly dried on raised beds, below 35 degree celsius, until ideal moisture content was achieved.

Richly aromatic, sweetly savory. Raspberry, honey, vanilla yogurt, baking chocolate, hop flowers in aroma and cup. Savory-sweet, bright acidity; delicate, silky mouthfeel. Finish consolidates to notes of baking chocolate and honey with undertones of hop flowers.
Red berry and crisp chocolate notes ground this Colombia co-ferment that’s complicated by a bittersweet floral throughline.
