Coffee Spotlight: Finca Santa Monica Strawberry Co-Ferment
We are so excited to share about another perfectly executed Co-Fermented coffee from producer Jairo Arcila on today’s coffee spotlight blog post!
This time it’s a strawberry co-ferment, a flavor profile that won us one of our Golden Bean trophies a few years ago. Combine that roasting expertise with a new high quality coffee from one of our favorite producers and you have specialty coffee magic!
This lot is 100% Castillo variety. Arcila processed it with a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage strawberry and wine yeast were added. The cherries were then pulped and placed to dry on raised beds with ripe strawberry placed amongst the coffee until the ideal moisture content was achieved. As with all of the experimental co-fermented coffees we’ve sourced from Finca Santa Monica in the past, this coffee is balanced, fruit-forward, juicy and sweet!
Jairo Arcila is a third-generation coffee grower from Quindio, Colombia. He now works with his two children at their farm, Finca Santa Monica; together they produce incredibly high quality coffees, continually learning, improving, and innovating in order to achieve excellence. We have sourced coffee from him frequently in the past, and their coffees alway exceed expectations!
The result of Arcila’s meticulous co-fermentation? A sweet balanced coffee that tastes like strawberries, jam, sweet candy, floral and has a delicate citrus finish.
